Slaw is a great alternative to to leafy greens but is a little more robust which means it requires some love. Salt, sit and massage to soften, dress with olive oil and vinegar and you have your self the perfect slaw.
Place cabbage in a medium bowl; season generously with salt and give it a good toss.
Let the cabbage sit until it starts to release water (8–10 minutes)
Pour off all excess liquid and add vinegar and oil; toss to coat.
Taste and season with more salt if needed.
VARIATIONS
Add finely sliced onion and a dollop of savoury cashew cream or mayo for a creamy slaw, serve alongside Mexican inspired dishes. Add grated carrot for a colourful slaw.
This slaw is also a great base and an alternative to leafy greens. Add some fresh herbs, some crunchy nuts and even something sweet like finely sliced dates. You can also add grains or legumes and top with protein of choice.
