Lemon Oregano Roasted Chicken Thighs

These Lemon, Oregano Roasted Chicken Thighs are so simple and versatile. Perfect served alongside one of our lighter meals or a simple green salad and some crispy roasted potatoes.

INGREDIENTS
  • 500-600g chicken thighs
  • Oregano 2 tsp dried or 2 Tbsp fresh (finely chopped)
  • Zest and juice of one lemon
  • 1 Tbsp maple syrup or honey
  • 3 garlic cloves (crushed)
  • 1 Tbsp olive oil
  • Salt and pepper

METHOD
  1. Preheat the oven to 200 degrees fan bake.
  2. In an ovenproof dish add the lemon zest and juice, oregano, maple syrup, garlic, olive oil and a pinch of salt and pepper.
  3. Add the chicken thighs and toss well to coat them in the marinade. Allow to marinate for 15 minutes while the oven heats up.
  4. Pop in the oven to cook for 30-40 minutes until golden brown and cooked through.
VARIATIONS
  • If you don’t have oregano this recipe also works well with rosemary, thyme or even dried mixed herbs.
