I’m Laura, co-founder of assortment! I run assortment with my childhood bestie and the only other person that I think loves food as much as me (Nikki). My background is in content marketing, food photography and holistic nutrition and assortment combines all of these things that I love.
Eat real food! As Michael Pollan says,“eat food, not too much, mostly plants.” I love this quote. I think we’ve totally over-complicated everything to do with food and diet and just need to get back to basics. At the same time, I believe life is about balance and there can be benefit in a glass of wine, or a yummy meal out with friends. After all, it’s how you live your life most of the time that matters and, sometimes, the stress of eating something ‘bad’ is worse than just eating it in the first place.
Hmm.. there has been a few but I’d say most recently would have to be deciding to steam some dumplings one Sunday (after a few wines on Saturday night) and putting them in the steamer with no water at the bottom, I checked on them a couple of times and couldn’t believe how long they were taking to cook until I smelt a strong burning smell and realised I’d forgotten to add water and it’s safe to say the bottom of the pot took a LOT of scrubbing to see the light of day again.
I love an easy traybake!
Ahh, this is hard - there are a lot of things that I always have on hand but I’d say tahini, nut butter, miso paste and bananas.
Avocados and raw tomatoes!

Switching off and spending time in nature, quality time with my fiancé, or cooking with a glass of wine in hand and listening to some music or a podcast.
My mornings usually start with a smoothie bowl (pretty much an ice cream for breakfast in disguise). I’m obsessed with my morning smoothie and recently have been making one that honestly tastes like salted caramel.
1 frozen banana
1/2 cup ice
1/4 cup of water
1 serve protein powder
1 Tbsp smooth peanut butter
1/2 tsp miso paste
1/2 tsp cinnamon
1. Add all ingredients into a blender, and blend until smooth and creamy.
2. I like to top mine with some hemp seeds and cacao nibs for a little crunch.
Lunch is usually assortment leftovers or I’ll make a big salad on a Sunday to have for lunches during the week. Some of my go-to’s are our Kale, Sweet Potato and Crispy Chickpea Salad with Creamy Dressing, Marinated Lentil Salad with Roasted Carrot, Fennel and Goats Cheese or our Cauliflower, Carrot and Quinoa Salad with a Sun-dried Tomato Pesto
Dinner - usually I'll be testing a meal for assortment or cooking along with the week's menu.
I think starter and main would be combined with a Middle Eastern-inspired feast - think slow-cooked lamb, flatbreads, tzatziki, hummus and lots of roasted vegetables. For dessert, I can’t go past tiramisu!
Tea or coffee - Coffee!
Dine-in or takeaway - Dine-in!
Wine or cocktails - Wine unless it’s a negroni
Mild or spicy - Mild
Breakfast or dinner - Dinner - definitely my favourite meal of the day.
Eggs or pancakes - Pancakes
Burger or pizza - Pizza
Cheese or chocolate - I genuinely don’t think I can choose!
Cook or clean - Cooking for sure.
Crunchy or smooth peanut butter - Team smooth 100%
