Easy Healthy-ish Banana Bread

This is the perfect loaf for the lazy baker, no beating, no creaming and very few dishes – simply mix all of the ingredients together and pop it into the oven (patience, while it bakes, is probably the hardest part!)

Ingredients
  • 3 medium ripe bananas (mashed)
  • 3 eggs
  • 2 Tbsp – ¼ cup maple syrup*
  • 100g butter (melted)
  • 1 tsp pure vanilla extract
  • 1 cup oat flour
  • 1 ½ cups almond meal
  • 1 tsp baking powder
  • ½ cup walnuts (roughly chopped)
  • ½ – ¾ cup dark chocolate (roughly chopped)*
  • ½ tsp cinnamon (optional)
  • Pinch of salt

*Add as little or as much as you would like depending on how sweet you would like the loaf to be. Ripe bananas are naturally sweet, so you may not need as much as you think.

Method
  1. Start by preheating the oven to 180 degrees, fan bake and grease a loaf tin.

  2. Prepare the dry ingredients. Sift the oat flour, almond meal, baking powder, cinnamon and salt together; set aside

  3. In a large mixing bowl, add the mashed banana, eggs, maple syrup, vanilla and melted butter. Mix well to combine all the ingredients.

  4. Add the flour mixture and mix well to combine.

  5. Add the walnuts and chocolate chips, and gently fold through.

  6. Pour the mixture into the greased loaf tin and bake for 50 minutes or until a skewer comes out clean.
