Maple, Cinnamon and Tahini Granola

Homemade granola is incredibly easy to make plus it’s cheaper and better for you than store-bought which often has lots of sugar, additives, and preservatives.

Ingredients
  • 2 cups coconut chips
  • 1 cup rolled oats or buckwheat groats
  • 1 cup mixed nuts (roughly chopped)
  • 1/2 cup seeds
  • 3 Tbsp coconut oil or butter
  • 2-3 Tbsp maple syrup or raw honey
  • 2 Tbsp tahini or any nut butter
  • 1 heaped tsp cinnamon
  • A dash of vanilla extract
  • Pinch of sea salt
Method
  1. Preheat the oven to 160 degrees celsius.
  1. In a small saucepan melt together the coconut oil, maple syrup and tahini then add the cinnamon, vanilla and sea salt. 
  1. Place the nuts, seeds, coconut and rolled oats into a large bowl and pour over the melted coconut oil mixture.
  1. Give it a really good stir to make sure everything is covered.
  1. Pop on a lined baking tray and allow to cook for 15-20 minutes until golden (keep a close eye on it as the coconut burns easily).
  2. Allow to cool completely before putting the into an airtight container. 
Variations
  • You can use any nuts and seeds you like. We used a mix of cashews
  • You can also use any nut butter if you don’t have tahini on hand.
