Thai Style Smashed Cucumber Salad

Cucumbers are smashed and salted to help release liquid, and then marinated in a sweet and tangy dressing.

Ingredients

1/2 telegraph cucumber 
1/4 cup rice wine vinegar
1 Tbsp coconut sugar
1 Tbsp fish sauce
1/2 red chilli (finely sliced)
1 garlic clove (crushed)
1 tsp sea salt
1/4 cup cherry tomatoes (sliced in half)
2 Tbsp peanuts (roasted and roughly chopped)
2 Tbsp fried shallots
A handful of fresh coriander

Method

1. Roughly slice the cucumber into finger sized chunks

2. Add the cucumber to a bowl and sprinkle it with salt and allow to sit for 10 minutes or so.

3. In the meantime make the dressing by simply combining all ingredients in a small bowl and mixing with a spoon to combine.

4. Rinse the salt off the cucumber and drain off the excess water. Add the cucumber and tomatoes to a bowl and pour over the dressing.

5. Allow to macerate for at least 15 minutes before serving. When you’re ready to serve sprinkle over the peanuts, shallots and some fresh coriander leaves.
